Leaves of the World | Greek Mythology Sorbet

You Will Need:

- 6 Leaf Loaders of Greek Mythology Tea from Leaves of the World

- 270ml Water (TO boil, or 250ml if you're cold brewing!)

- 250g Sugar

- Lemon Peel

Steps:

Heat 270ml of water in a small pan with the 6 leaf loaders of Greek Mythology tea and step for around 5 minutes. Recipe only require 250ml, so if you'd prefer to cold brew the tea that maybe a good idea. I added an extra 20ml to allow for evaporation. Sieve the tea.
*You could also add your tea to a large empty teabag and brew that way, but I preferred to let the tea steep freely.

Heat the tea mixture, the lemon peel and the sugar in a small pan until the sugar has dissolved then bring the mixture to the boil. Cook for 3 mins then turn off the heat and leave to cool. Sieve out the Lemon peel.

Pour into a tupperware box and freeze for 1hr 30 mins then mix up with a whisk to break up and incorporate the ice crystals (which will be starting to form at the edges) before returning to the freezer.

Keep mixing the sorbet once an hour for 4 hours to break up the ice crystals. Stop mixing when firm but still scoopable then store in the freezer. The sorbet should last you up to around a month.

Serve scoops of sorbet decorated with a few curls of lemon zest

This sorbet is absolutely delicious especially in the weather we are having at the moment! It'd be perfect sat outside in the sunshine. Or if you prefer something a little fancier, add two scoops to a tall glass, top with sparkling water and add a shot of vodka or limoncello!
